Abstract
Når befolkningen vokser, stiger efterspørgslen efter mad, og dermed også madspild og ressourcespild. Dette speciale undersøger, om et nyt lokalt madmarked i projektet Cloud City Aalborg—med en planlagt Market Hall (markedshal) som omdrejningspunkt—kan ændre måden, folk forbruger mad på. Idéen er at skabe et synligt, cirkulært og ressourceeffektivt kredsløb, der giver maden mere værdi ved at lade folk opleve, hvordan affald bliver til en ressource. As populations grow, demand for food rises, leading to more food waste and wasted resources. This thesis explores whether a new local food market in the Cloud City Aalborg project—centered on a planned Market Hall—can help change how people consume food. The idea is to create a visible, circular and resource‑efficient loop that adds value to food by letting people experience how waste becomes a resource. In the loop, food waste from the Market Hall and nearby restaurants is collected and composted to produce fertilizer for rooftop farms that grow produce for the market. To understand how such experiences might influence food consumption, the study conducts an extensive literature review.
