Abstract

Denne afhandling undersøger, hvordan familiebrug kan påvirke bæredygtigheden i fødevareindustrien i Kroatien. Formålet er at belyse deres rolle og handlemuligheder i lyset af skiftende forbrugertrends og Covid-19-pandemiens forstyrrelser. Undersøgelsen er eksplorativ og bygger på en kvalitativ tilgang med dybdeinterviews af seks familiebrug og én ekspert i bæredygtighed. Analysen peger på, at familiebrug kan styrke bæredygtigheden gennem samarbejde i kooperativer, øget fleksibilitet og diversificering af produktionen. Interviewene giver desuden indsigt i aktuelle markedsvilkår, centrale udfordringer og de konkrete konsekvenser af Covid-19 for drift og afsætning. Studiet bidrager med ny viden til et område, hvor der findes begrænset forskning om kroatiske familiebrug.

This thesis explores how family farms influence sustainability in Croatia’s food industry. Its purpose is to clarify their role and scope for action amid shifting consumer trends and the disruptions caused by the Covid-19 pandemic. The study is exploratory and uses a qualitative design based on in-depth interviews with six family farms and one sustainability expert. The analysis indicates that family farms can advance sustainability through participation in cooperatives, operational flexibility, and product diversification. The study adds to the limited evidence base on Croatian family farms.
