Abstract
Denne kandidatafhandling undersøger ernæring, fællesspisning (commensality—at spise sammen) og food design. Udgangspunktet er et holistisk Integrated Food Studies-perspektiv. Studiet bygger på kvantitative data fra laboratorieforsøg i Food Scape Lab på Aalborg Universitet København. Målet er at designe og afprøve nye måder at spise på, som både fremmer sundhed og ernæring og samtidig understøtter socialt samvær ved måltidet. For at belyse dette blev et spiseobjekt afprøvet for at skabe viden om, hvordan spisepraksisser kan udvikles, så ernæringen forbedres, uden at miste betydningen af fællesspisning.
This master’s thesis examines nutrition, commensality (eating together), and food design. It takes a holistic Integrated Food Studies approach and draws on quantitative data from laboratory experiments at the Food Scape Lab at Aalborg University Copenhagen. The aim is to design and test new ways of eating that support good health and nutrition while also sustaining social interaction at mealtimes. To explore this, the project tested an eating object (a designed item used during eating) to learn how eating practices might be shaped to improve nutrition without diminishing the social meaning of shared meals.
