Abstract
This thesis examines how everyday practices of shopping, cooking, and family dinner shape the daily vegetable intake of low-income single mothers with young children in a Danish context. Grounded in a constructivist perspective and using a practice theory approach, the study explores the multiple factors that influence consumption. Data were collected through participant observation and interviews to capture the mothers’ actions and accounts in daily life. Three sub-questions address how vegetables are enacted within families, what influences mothers’ shopping, cooking, and eating practices, and how the study of vegetable intake fits within practice theory. The analysis identifies four recurrent themes that structure mothers’ practices and thus vegetable intake: meat, economy/sales, childhood, and children’s influence on their mothers. The study also indicates that practices beyond shopping, cooking, and dinner matter for intake. While not designed to test interventions to increase consumption, the findings offer insights that can inform future research or initiatives.
Denne afhandling undersøger, hvordan hverdagens praksisser med indkøb, madlavning og aftensmad påvirker det daglige grøntindtag hos lavindkomst-singlemødre med små børn i en dansk kontekst. Med udgangspunkt i en konstruktivistisk forståelse og en praksisteoretisk tilgang søger studiet at forstå de mange faktorer, der former forbrug. Data er indsamlet gennem deltagerobservation og interviews for at få indblik i mødrenes handlinger og udsagn i hverdagen. Tre underspørgsmål belyser, hvordan grøntsager indgår i familiernes liv, hvad der påvirker mødrenes indkøbs-, madlavnings- og spisepraksisser, og hvordan studiet af grøntindtag kan forstås inden for praksisteori. Analysen identificerer fire gennemgående temaer, der præger mødrenes praksisser og dermed grøntsagsindtaget: kød, økonomi/tilbud, barndom samt børns indflydelse på mødrene. Studiet peger desuden på, at ikke kun indkøb, madlavning og aftensmad, men også andre hverdagspraksisser har betydning. Formålet er ikke at udvikle tiltag til at øge forbruget, men resultaterne rummer indsigter, der kan inspirere fremtidige studier eller interventioner.
