Abstract

This thesis examines pathways toward a more sustainable to-go coffee practice in Copenhagen by replacing single-use cups with circular systems of reusable cups. It aims to describe the actors forming the networks around this practice and to identify the alliances and resistances that arise as multiple actors seek to shape the transition. The study is based on ethnographic fieldwork, including participant observations and interviews with involved actors. Findings indicate that change is emerging: alliances are built on shared understandings of sustainability and the urgency of action, while resistances stem from practical issues related to cup design and system implementation. Convenience is identified as the decisive factor for user acceptance. The future of to-go coffee depends on where responsibility for change is placed and which actors are mobilized.
