Formålet med specialet er at undersøge markedspotentialet for salg af modificeret kost til borgere med dysfagi i Regionshospital Nordjyllands optagekommuner ved at afdække behov, krav og økonomiske rammer hos centrale aktører. Med en kvalitativ tilgang blev der gennemført interviews med fagpersoner, borgere med dysfagi og kommunale embedsmænd, hvorefter de transskriberede interviews blev tematiseret og analyseret. Analysen peger på, at konsistens, smag, udseende og ernæringssammensætning er afgørende for både accept og effekt af dysfagikosten, og at forbedringer på disse områder kan øge livskvaliteten. Borgerne udtrykker villighed til at betale en merpris, men kommunernes begrænsede ressourcer stiller skarpe krav til prissætning og prioritering. Samlet set indikerer resultaterne, at der er behov for videreudvikling af den eksisterende dysfagikost med fokus på sensorisk kvalitet og næringsindhold samt på omkostningseffektivitet for at muliggøre udbredelse i både offentlige og kommercielle sammenhænge i Nordjylland.
This thesis explores the market potential for selling modified diets for people with dysphagia within the catchment municipalities of the Regional Hospital of North Denmark by mapping needs, requirements, and budget constraints among key stakeholders. Using a qualitative design, interviews were conducted with professionals, citizens with dysphagia, and municipal officials; transcripts were organized into themes and analyzed. Findings indicate that texture, taste, appearance, and nutritional composition are critical for acceptance and impact of dysphagia diets, and that improvements in these areas may enhance quality of life. While citizens express a willingness to pay more, municipal resource constraints impose strict price and prioritization requirements. Overall, the study points to a need to further develop existing dysphagia diets with a focus on sensory quality and nutrient content alongside affordability, to enable wider adoption in both public and commercial markets in North Denmark.
